Blender French Dressing

Submitted by Helen Brody on December 8, 2008

As school kids, Taylor farm sons tapped trees during sugaring season and boiled the sap over a wood fire in their Meriden Village home driveway to add to their mother, Gretchen’s, salad dressing. Today the Taylor Brothers’ sugarhouse has a 5,000 tap operation.

1 cup ketchup
1/2 cup maple syrup
1/2 cup cider vinegar
1 teaspoon salt
3/4 cup vegetable oil
1/4 teaspoon freshly ground black pepper
1 teaspoon dry mustard

Put all ingredients into a blender or food processor and blend on high speed for 20 or so seconds. Chill well before using.

Yield: 2 1/2 cups
